What is NSF/ANSI 2?

NSF/ANSI 2 is the American National Standard that sets the sanitation, material, design and construction requirements for commercial food equipment. It exists to answer a simple, important question: can this piece of equipment be kept clean enough to be safe in a commercial kitchen or food operation? Rather than governing how a company is run, it governs the equipment itself — the tables, counters, hoods, shelving, cabinets, sinks and similar food-handling gear used in restaurants, cafeterias, bakeries and food-service settings.

Because it is a product standard, NSF/ANSI 2 works differently from a management-system standard like ISO 9001. Here, individual products are evaluated and certified and listed as conforming — commonly recognized by the NSF mark that food-service buyers and health inspectors look for. Certification and listing are carried out by an accredited certification body against the standard's requirements, and the result is that a specific product is publicly listed as compliant.

The standard focuses on cleanability. It addresses the materials that contact food and splash zones, corrosion and durability, the way surfaces and joints are finished so they can be cleaned and will not harbor bacteria, and construction details that avoid crevices, sharp internal corners and hidden voids where soil and pests can accumulate. In short, it turns the principle of hygienic design into concrete, testable requirements.

Who needs NSF/ANSI 2?

NSF/ANSI 2 matters most to the companies that make and supply commercial food equipment, and to the operators who buy it. Typical parties include:
