What Hygiene & Sanitation Excellence is

Hygiene Excellence and Sanitation Excellence are QSE management systems rather than external certification schemes. They exist to solve a specific problem we see constantly in food operations: cleaning and hygiene are treated as tasks on a list rather than as controlled, verified processes — and then a swab result, an FDA inspection or a customer audit exposes the gap.

The system produces a documented safety guide for your operation covering how contamination and health risks are prevented, backed by GMP training, environmental and microbial sampling, internal auditing, and a final compliance audit.

It is designed to sit underneath the certification schemes rather than compete with them. HACCP and HARPC identify hazards and preventive controls; FSSC 22000, BRCGS, SQF and IFS all assume competent sanitation as a prerequisite programme. Hygiene and Sanitation Excellence is where that prerequisite actually gets built, which is why it appears in food-safety and GFSI contexts as well as on its own.

Who needs it

It is a fit for organizations that:

  • Operate anywhere in the food chain — production, processing, storage, transportation or packaging
  • Are subject to FDA inspection and want to be genuinely ready rather than hopeful
  • Must meet FSMA requirements
  • Are preparing for, or already hold, a GFSI-recognized certificate and need the sanitation prerequisite to hold up
  • Have had environmental monitoring findings, a customer complaint, or a sanitation-related audit nonconformity
  • Want to demonstrate hygiene competence as a competitive advantage to retail and foodservice buyers

The most common trigger is an audit finding or a positive environmental swab, where the underlying cause turns out to be that sanitation was being performed diligently but not verified — nobody could prove the cleaning worked.

What the system includes

Built with our 10-Step Approach™, the programme covers:

  • A safety team with a designated leader, trained on the requirements
  • GMP training for the people doing the work, not just for management
  • A hygiene and sanitation management system designed around your facility and current good manufacturing practice — not a generic template
  • Master sanitation schedules and cleaning procedures written for the equipment you actually have
  • Environmental monitoring and facility sampling for microbial organisms, with a defined sampling plan and action levels
  • Verification and validation of cleaning — the step most often missing, and the one that turns activity into evidence
  • Integration with HACCP and HARPC, so sanitation functions as a documented prerequisite programme
  • Document simplification, so the system is usable by the people on the floor
  • Internal audits by certified auditors
  • A final facility compliance inspection and issuance
  • Post-audit support

Why it matters commercially

Sanitation failures are among the most expensive events in food manufacturing. A positive environmental result for a pathogen can mean product holds, recalls, customer delisting and regulatory attention — and the cost of the recall is usually smaller than the cost of losing the account.

The FDA inspection dimension is equally practical. Inspectors look for evidence, not effort. A documented programme with sampling data, verification records and closed-out corrective actions is a fundamentally different conversation from a clean-looking plant with no records.

And for buyers, hygiene competence is increasingly a selection criterion in its own right. Retail and foodservice customers audit sanitation specifically, because it is where they have been burned. Being able to show a controlled, verified system is a genuine commercial advantage rather than a compliance overhead.

How QSE delivers it

We bring 30+ years of food-safety and quality system work, 900+ organizations certified and a 100% success rate with our method. Our food practice runs deep — HACCP, HARPC, PCQI, FSSC 22000, BRCGS, SQF and IFS — and this programme is what we build underneath all of them.

We form and train the safety team, then design the management system around your facility, your equipment and your current practices rather than importing a template that does not fit. We establish the sampling plan and action levels, and put verification in place so cleaning produces evidence rather than just a signature.

Documentation is deliberately kept simple and single-level — this is a system operated by sanitation crews, often across shifts, and complexity is what makes systems fail on the floor. We train the people who will run it, conduct internal audits with certified auditors, then perform the final facility compliance inspection. Support continues after the audit.

Most organizations are complete within 6 months.

Common pitfalls we help you avoid

  • Sanitation performed diligently but never verified — activity with no evidence it worked
  • Environmental monitoring with no defined action levels, so a result arrives and nobody knows what it obliges you to do
  • Cleaning procedures written generically rather than for the equipment you actually have
  • Training management while the sanitation crew — the people who determine the outcome — receives none
  • Sanitation documented as a prerequisite programme in the HACCP plan, but disconnected from it in practice
  • A master sanitation schedule that has drifted out of date as equipment and lines changed
  • Systems too complex to follow across shifts, so they are signed rather than performed
  • Treating a positive environmental result as a failure to be minimized rather than as data the system is designed to produce and act on
